One would expect the 2015 Chevillon les Cailles to be outstanding, given that Monsieur Chevillon and his team started picking early and that is exactly what this wine is- outstanding! The bouquet is flat out great, as it soars from the glass in a blaze of sappy red and black cherries, plums, gamebird, a complex base of soil, dark chocolate, woodsmoke and a deft framing of vanillin oak. On the palate the wine is pure, full-bodied and very deep in the mid-palate, with a more reserved personality in the mouth than the stunning nose suggests. The tannins here are suave and seamless, the acids bright and the core happy in sappy adolescence all the way through to the very, very long and promising finish. This is a puppy and will really deserve some extended cellaring to show all its facets, but unless it really closes down after bottling, it is going to be loaded with temptation to drink on the early side!
