Using a centuries-old family recipe, this expression pays tribute to traditional methods that honor the purity of agave. Known locally as Jugo de la Selva—Jungle Juice—this spirit showcases 100% Blue Weber Agave from El Valle, slow-cooked under low pressure in a custom wood-fired autoclave. The cooked agave is hand-chopped with axes, shredded by a repurposed 1970s Chevy engine, and washed with pure natural spring water sourced just 100 meters from the still. Fermented in open air with wild native yeasts and twice distilled in a wood-fired stainless steel still with copper coils, the result is an unfiltered, additive-free spirit that’s intensely agave-forward, vegetal, and earthy, with layers of natural minerality.
