2023 Domaine Servin Chablis 1er Cru "Butteaux"

Review Date: 01/2025This is a seriously stylish and muscular Butteaux. It packs in a lot of fruit, spice and creamy richness. Marc Cameron said it is always the most powerful of the Premier Crus because it has more soil. This sees 450 L barrels before going into stainless steel. The finish is layered with apple slices, lemon zest and hay.

Note: from a .57 ha holding. Discreet if easily discernible wood surrounds the ripe aromas of pear, apple, seaweed and a hint of brine character. There is excellent volume to the caressing and seductive medium weight flavors that brim with sappy dry extract that helps to buffer the firm and bright acid spine shaping the markedly dry and lingering finale where the only nit is a touch of warmth. This too should amply repay at least a few years of aging.

The 2023 Chablis Les Butteaux 1er Cru, matured in 450-liter barrels, has a lovely bouquet with more panache than the Vaillons: orange pith and yellow plum, just a hint of praline in the background. The palate is well balanced with a slightly honeyed entry, though the acidity keeps it in check. Very pure and quite sensual, this is going to be difficult to resist in its youth.(NM)
