Dimitrios Kioutsoukis hails from the region of Thessaliniki in Northern Greece. Experimenting with local grapes like Limnio and Xinmavro, he also has planted famed Greek varieties like Roditis, Malagousia, Assyrtiko and Moschofilero. Working with all native yeasts, all wines are unfiltered and minimal sulfites added when necessary. The Nimbus Albus is a blend of 50% Malagousia and 50% Assyrtiko fermented separately in stainless steel tank. Once blended, the wines rest for 3 months in neutral oak barrels before bottling. *Natural Wine*
