Not yet bottled, the 2020 Côtes Du Roussillon Villages Latour De France Occultum Lapidem is more backward and reductive at this point yet has promising darker berry and cassis fruits as well as notes of violets and peppery herbs. Medium to full-bodied on the palate, it has good concentration and length, but its purity and balance are what really set it apart at this point. A blend of 60% Syrah, 35% Grenache, and the rest Mourvèdre, destemmed and brought up in concrete, it’s going to drink brilliantly on release and have at least 7-8 years of prime drinking.

A balanced, flavorful and textured red with notes of mulberries, dark plums and dark chocolate. Medium-bodied with fine tannins. Well rounded, with a dense core of berries, chocolate and mixed spices. From organically grown grapes. Drink or hold.

A blend of 50% Syrah, 45% Grenache and 5% Mourvèdre that was still in concrete when I tasted it, the 2020 Cotes du Roussillon Villages Latour de France Occultum Lapidem is peppery and spicy, with plenty of blueberry and cassis fruit. Medium to full-bodied, creamy and supple in feel, with a long finish, could this be better than the impressive 2019? (JC)

Occultum Lapidem is the wine that firmly established Michel Chapoutier’s Bila-Haut project in Roussillon. Sourced from the renowned village of Latour de France, this Syrah- and Grenache-dominant blend (a splash of Mourvedre is also hiding in the background on this vintage) captures the region’s warmth and generosity while staying true to Chapoutier’s commitment to elegance and depth. Notes of black cherry, Medjool date, and pipe tobacco are layered over a core of striking minerality, giving the wine both richness and precision. The nose, even after a few hours to open further is still very dense and savory. The fruit is inky black, with stewed black cherries, blackberry compote with herbs, and violets. The nose is very savory, but in an inviting and intriguing way, a way that makes me sad I don't have a little bit of something to eat right now while I try it but we must soldier on. The palate is super dark and dusty on the front, with the same fruit but with hints of cocoa and then underneath there's lighter and riper fruit showing through, the line of acidity pushing through not too forcefully with a really nice balance. This is a savory little treat, excellent for when you want a wine with more power but not something that's going to have too much fruit if you're against that sort of thing. This is a lot of wine for the money and we have some of the very best pricing on this, get it while you can, because once it starts to cool down a bit you're going to want this with all your stews and roast beasts.

Notes

Michel Chapoutier established Bila-Haut in 1999 when he determined he could make top notch wines in this region that rivaled his own from the Rhône. The winery, built in Latour de France, has vineyards throughout the region. All Domaine wines are farmed biodynamically. Vines are planted over gneiss, schist and some limestone. It is generally a blend of Syrah and Grenache with small amounts of Mourvedre depending on the vintage. During picking, all grapes are hand-harvested and destemmed. Vinification of the varieties is done in both concrete vats and large format oak casks.
