Kabaj (Ka-bye) have farmed their vineyards for many generations. When Katja Kabaj met French oenologist Jean-Michel Morel after his stint at an Italian winery, they fell in love and eventually married. Jean-Michel brought some of those Italian and French sensibilities to the winery along with his fondness for working with amphorae. Those who have tasted Kabaj whites know that these wines range from light to full skin contact for the whites. And that the "Sivi" Pinot Gris is truly intriguing. It's aged for two weeks on the skins and then for about a year in neutral barrels before bottling. Since Pinot Gris is a naturally pink colored grape it has a light rose hue that adds to the already fascinating and inviting flavor profile.
