The Caol Ila distillery has long been one of our favorites. The complex smoke that it can produce it totally distinctive and truly one of the finest on Islay. While the distillery can exhibit several styles and drink extremely well in its youth, there is a something special that happens when Caol Ila meets sherry after 15 years. This beautiful barrel of 2007 Caol Ila was aged initially in refill hogshead before a long finish in fresh oloroso sherry. Distilled on September 2nd of 2007, it was placed into this secondary cask in Spring of 2020. Resting in there, depth and complexity are added for almost a full 3 years, so truly a secondary maturation, not a quick finish here. It was bottled at cask strength without chillfiltration in the summer of 2023 at an abv of 52.8%. Other stores have sold bottles from this same cask for nearly twice the K&L price. It's an incredible deal that is unlikely to be repeated in the future.
