After a couple hours of air, this wine has really opened up impressively - not that it was a slouch at first whiff. There's a dense earth and touch of green peppercorn on the front that is quickly followed by dense and dusty fruits. Brambleberries, plum skin, and black cherry all intersperse amongst the savory elements giving this Xinomavro a really excellent balance. The firm grip of the tannins, however, encourages you to enjoy this with something a little rich and fatty. There's enough fruit you could consider a steak, but I would push much more towards duck and other game birds, hopefully something a little gamey.
