From the producer: "Capi Cachaça is made with three simple ingredients – water, sugarcane, and yeast – no additives ever. It’s handcrafted in Rio Grande do Sul, Brazil by a family run operation that grows and harvests its own sugarcane in an organic and water neutral process. The cachaça is made in small batches and distilled in copper pot stills (aka cachaça alambique) to enhance the flavor and remove impurities. Each batch has subtle differences depending on that year’s harvest, offering you a one-of-a-kind experience." Capi Cachaca comes from the Mandelli Destilaria in the small town São Vendelino in Rio Grande do Sul, the southernmost state of Brazil. Family owned and operated, they also own the farm where the cane is grown and manage production of every aspect of the cultivation, harvesting, fermentation and distillation. Their farm has a light clay soil and they use sugarcane varieties from Ridesa and CTC institutes. The cachaça is distilled once in a copper pot still with a capacity of 1,000L. Each run yields just 140L of cachaça pulled from the still at 48% alcohol by volume. They meticulously remove the head and tail to eliminate impurities and ensure the highest quality spirit. The result is a crisp yet flavor cane spirit of the highest quality.
