BXT is a very small and very exciting sparkling wine project based in Napa, CA. Winemaker Tom Sherwood hand-crafts tiny batches of grower Champagne inspired sparkling wines from unique vineyard sites across Northern California. The wines are very small production, typically less than 50 cases of each cuvée, fermented and large oak casks, aged on lees for 18-36 months, riddled and disgorged by hand. Winemaker's Notes on the 2022 Wheeler Blanc de Blanc: " For over 40 years, John Siletto and his family have been organically farming several unique sites and varietals in San Benito County. Planted on a gravelly alluvial fan of Pleasanton loam, 49-year-old Wente Clone Chardonnay on the rootstock AXR-1 remains firmly planted having survived phylloxera that swept through the California wine industry 30 years ago. The Chardonnay was our last pick of the 2022 and was hand harvested on the August 18th. The wine was gently whole cluster pressed, oxidatively handled and fermented in a large format neutral French oak barrel. The wine was assembled, and hand bottled without fining or filtration to reach 5 bars of atmospheric pressure on the March 1st, 2023. The wine was left to age in bottle for 18 months before being hand riddled and disgorged without sulfur or dosage."
