Really pretty nose, with this bright lemon verbena note that fades into something a little more earthy that I want to call "clay you actually would drink" because no notes discourage me from taking a sip. Underneath that there's more herbal notes, a little bit of maybe eucalyptus and then kind of sassafrassy on the towards the end. The palate has a lot of the same notes, along with a really bright kind of medicinal orange note. The more that it sits, the nose gets a little bit more complex and interesting as various scents tune in and out for you. This is very much in the spirit of the Aperitivo but with everything tuned down just a bit and allowed to have a little more breadth. It's just fantastic.
