Casa Mouraz is a small project that is based in the wild mountainous region of Dão. They were one of the early advocates in the region for organics and sustainable practices as well as biodynamics. All their wines are made in a mix of modern in traditional, they use traditional techniques but using modern equipment. They only use native yeasts, the wines are foot trodden, seeking lighter extractions, and they use chestnut flowers to stabilize the wine instead of using sulfur.
