Comforting nose of apples, baked lemons, quince zest and some brioche, too. Medium body with fine bubbles and crisp acidity. Lively and agile with a mineral frame. Bone dry and bright at the center with weight. Flavorful and succulent finish.

The NV Montlouis-sur-Loire Triple Zéro spends between two and three years on lees, lending a lovely richness to the mid-palate. It was bottled with no dosage, but picking later gave the wine balance and roundness - no austerity or hardness. The Triple Zéro is gently sparkling (bottles at 3 atmospheres rather than the usual 5-6 for champagne) with great clarity and precision. There’s excellent focus and tenderness here. (RG)

This was harvested at full ripeness, fermented spontaneously and bottled with residual sugar so the second fermentation in bottle stems from these natural sugars. ‘Triple zero’ means there was no chaptalisation of base wines, no addition of sugar to start the second fermentation and no dosage. The golden colour speaks of slight evolution, the nose brims with Chenin Blanc’s intense ripe yellow apple flavour, both baked and fresh. The palate continues in this rounded, mellow apple fashion, clear-cut, bone-dry and fresh, expressive and salty. One for the table with its lasting, smooth finish. (AK)

The Triple Zéro Pétillant non-vintage bottling from Jacky Blot is made from hand-harvested chenin blanc vines that are sixty to more than eighty years of age. The vins clairs are barrel-fermented and the wine is aged for two years sur latte prior to disgorgement. The wine offers up a lovely nose of tart orange, quince, rye bread, chalky soil tones, a hint of honeycomb and a topnote of dried flowers. On the palate the wine is zesty, full-bodied, focused and complex, with an excellent core of fruit, pinpoint bubbles and lovely balance and grip on the young and complex finish. This is an excellent Brut Nature that could do with a couple of years in the cellar to my palate, but which is probably already absolutely delicious for the truest fans of non-dosé sparkling wines. Fine, fine juice.

One of Jacky Blot most striking creations is his TRIPLE ZERO, a lightly sparkling wine that he describes as "above all a natural wine that happens to have some bubbles." The TRIPLE ZERO begins with fully ripe Chenin Blanc grapes from low-yielding, 50+-year-old vines in the Montlouis appellation. There is no chaptalization; this is the first of the three ZEROS. Blot bottles the wine after about 3 months, when the fermentation in barrel has proceeded to the point where the natural sugars have almost fully fermented and only about 14 grams per litre of sugar remain.At this phase, Blot adds no liqueur de tirage, or sugar syrup, as is common practice in champagnisation; this is the second of the three ZEROS. Just as the Triple Zero is made in traditional method with two fermentations in bottle, it also clarified and finished in the traditional way before the final corking. This procedure is necessary to remove the yeast deposit that develops in the bottles as the wine rests on its lees after the 2nd fermentation. And at this last stage before final bottling, Blot adds no liqueur d'expedition or dosage of sugar-rich juice, as is commonly done; this is the third of three ZEROS. The result is an unfiltered, naturally made sparkling wine with unsurpassed elegance, purity and expression of fresh, soft citrus and pear flavors. The Domaine de la Taille aux Loups Montlouis Triple Zero is ideal on its own, as an aperitif and as an accompaniment for a wide variety of foods.
