Charles Doyard, working with his father since 2006, farms old vines in Côtes des Blancs. Embracing traditional methods, his wines are bottled at lower pressure and aged on lees for depth. He uses minimal intervention, no new wood since 2007, low SO2, and natural cold-stabilization.
