Review Date: 05/2022A notably light and vegetal take on añejo. Look for a pale straw hue and mild, peppery aromas, plus a flinty hint. The palate mixes sweetness and pleasing salinity: salted almonds winds into bell pepper, asparagus and fresh herbs. Salted vanilla sweetness takes over into the warming finish. Aged one year in ex-American whiskey barrels. (KN)

Ocho's tequilas are made by Carlos Camarena, a third-generation Tequilero, and Tequila Ambassador Tomas Estes. And each vintage—yes, these are vintage designated tequilas, comes from a single estate with its own mesoclimate, making them the most terroir-driven tequilas on the market. The NOM 1474 or Tequilera Los Alambiques is actually the very same facility where the famous Tapatio and El Tesoro are made. This collaboration seeks to distill the purest form of agave to highlight the distinct flavor differences between agave grown in different terroir. Carlos uses estate-grown agave and traditional methods to slow ferment and distill his specially selected agave. Ocho is always aged in used whiskey barrels so as not detract from the incredible depth of flavor that this special spirit exhibits straight off the still.
