Domaine Regis Rossignol-Changarnier cares for just over 7ha in Volnay, Pommard, Beaune, Savigny-les-Beaune and Meursault. From the domaine: "The control of our yields (between 25hl and 40hl / ha maximum) is a very important factor for the pinot noir to develop all its aromatic potential. In this context, we often practice a harvest "in green", that is to say eliminate, at the moment when the grapes begin to ripen, bunches that we consider surplus. The grapes are still harvested manually and are not, or little, destemmed, giving our wines more character, fruit and care. The vatting lasts on average a dozen days and the treading is traditionally done with the feet. The wines are aged for 13 months before bottling, exclusively in oak barrels of which 20% maximum are new."
