Steered by esteemed Master Distiller, Billy Walker, the GlenAllachie team embarks on a 'Meikle Tòir', or 'big pursuit', at their Speyside base—The GlenAllachie Distillery. Their aim is to create a matchless peated single malt, perfected from cask to bottle. 'The Sherry One' is a fabulous single malt, matured in premium Pedro Ximénez and Oloroso Sherry puncheons. This meticulous maturation process imparts rich, fruity notes that harmonize delightfully with the warming trails of peat smoke. Produced using mainland peat from St. Fergus, the whisky's sweet phenolic content totals 35 PPM. After enduring a fermentation stage of 160 hours, the resultant spirit is notably fruit-forward and pairs perfectly with the aging process in exceptional sherry oak. Presented in natural color and non-chill filtered form, the whisky captivates the senses with enticing tasting notes. The nose heralds the scents of cedarwood, cigar box, butterscotch, mocha, along with notes of orange peel, honey, and plum jam. In contrast, the taste unfurls a panorama of dark chocolate, smoked honey, mocha, figs, treacle, and burnt sugar— all culminating in gentle puffs of peat smoke.
