My favorite zero dosage champagne in the store! I love the fact that this wine would be impossible to pick out as sugar free, such is the perfect balance of this patiently crafted wine. The trick is time- it has been aged for seven years on the lees, and the finished product just doesn't need any added sugar, as the long contact with the lees in the bottle has given it natural richness. If you love a dry style brut, this is one to try for sure, it has great sourdough toast and fine citric zip.

This is Champagne stripped down to its essentials—no sugar added, just pure fruit and chalk. It’s a blend of Chardonnay, Meunier, and Pinot Noir, and while it’s made in the same style as the regular Quinconce, this one is much more about structure and tension. The nose is all oyster shell, citrus peel, and raw almond, with just a little yeasty background note. On the palate, it’s lean, electric, and bone-dry—green apple, lemon pith, and a bracing mineral finish. There’s no softness here, but that’s exactly the point.

Once upon a time, before Climate Change became a reality for the people of Champagne, Brut Nature could be an almost punishing designation. These high-acid wines with zero dosage would sing on the palate, bringing line after line of racy and ripping acidity that would be austere to the point of masochism, you know, in that fun wine way. Now, they're often higher in acid but with the warming of it all, they're not nearly as punishing. This is a great example, because the nose has a lot of promise with a lot of sourdough accompanying a Cosmic Crisp apple and some lemon zest. The palate is bright and mouthwatering but not punishing, instead this is just on the edge, there's still a roundness there that pulls back that final punch and instead gives you a little pat on the shoulder. This is deliciously intense in the best of ways. Always one of my favorites year after year.

This exuberant bottle shares the foundation of the Quinconce Brut—only with zero dosage added before release. Like its counterpart, it receives exceptional care throughout production, including an impressive seven years of lees aging. While some Brut Nature cuvées can feel overly racy or unbalanced, lady time has worked her magic here. The laser-like acidity is perfectly tempered by the richness of lees aging and a masterful assemblage, resulting in a wine that is as seamless as it is striking. Simply put, it’s a lifted, bright, and beautifully balanced bubbly—one I can’t wait to pour another glass of.

Notes

This wine used to be called the Esprit- but now goes by the name "Quincone"- the term used for stacking bottles like sardines in champagne. This blend of 55% Chardonnay, 25% Meunier and 20% Pinot Noir is sourced entirely from the Baron Fuenté estate in the western valley of the Marne. Because of the over six years on the lees, this zero dosage Champagne comes across as dry, but not at all austere. In fact, this wine is loaded with cream and brioche, focusing to a crisp finish. This is perfect for a wide variety of foods, but especially for shellfish! (Gary Westby, K&L Champagne buyer)
