This newly reformulated version of an up-and-coming player in the lowlands of Tequila now comes from the acclaimed Las Rocas distillery in Amatitlán, ranked among the top ten in Mexico. Las Rocas has been making waves for its focus on quality, and Casa Azul is their flagship single-estate, certified organic agave tequila. The brand in the blue bottle definitely isn’t that other “Azul” tequila—there are so many. Here it’s just three ingredients, with brick-oven roasting, slow steam cooking, and natural fermentation before careful distillation. The blanco rests in stainless steel for two to three months prior to bottling, allowing the flavors to settle and integrate. The result is a fabulous addition to the pantheon of great lowlanders, without pretense or hype. There’s a new CASA in town.
