Winemaker Sylvain Pataille strongly believes in letting the vines lead the way. He promotes little intervention, as well as organic and biodynamic wines. His use of Aligoté, often referred to as "Burgundy's other white grape", has made him something of a pioneer in Burgundy. Not only does he embrace Aligoté, but he also goes so far as to produce single-vineyard bottlings. In the process, he has brought greater attention to the Marsannay region, as well as shown that the lesser known Aligoté captures the soul of Burgundy as much as Pinot Noir and Chardonnay do.
