This estate-grown tequila from the master at El Pandillo Distillery, Felipe Camerena, is poised to become one of the leaders in this ever-growing category. Made from just three ingredients - blue weber agave, water, and natural yeast - Volans never adds or alters their tequila in anyway. Felipe is one of the highlands' preeminent distillers and his exceptional distillery, El Pandillo, is always offering top quality, but Volans flies above the rest. The agave are cooked for 22 hours in traditional brick ovens before being crushed on the linear electrically driven tahona specially designed by Felipe. A mixture of three water sources gives Volans its unique character - a rich mineral spring water, a highly mineral well water, and an alkaline rainwater collected at the distillery. The initial mash is fermented in open steel tanks without the agave fibers included with the Camerena family yeast, which has been cultivated naturally for decades. The tequila itself is distilled twice on small copper pots with the heads included and the tails removed. The reposado is an assemblage of tequilas rested in ex-bourbon barrels for up to 11 months. On the nose, it shows baking spices including cinnamon and clove, before giving way to a rich buttery mouthfeel, with flavors of cooked agave, minerals, citrus, pear, oak, hints of cooking spices and caramel.Overall, this is a well rounded lasting finish with sweet and mild pepper notes.
