I had a feeling this sake would be special just from the label- a playful bouquet of mushrooms in all shapes and colors, hinting at what’s to come. And it delivers! This Junmai Ginjo opens bright and lifted, yet surprisingly full, gradually developing into something richer and more layered. I especially like its complexity, balancing savory and sweet- earth and toasted nuts alongside notes of honey and sweet miso. The finish leans into umami, with a mouthwatering mushroom note that ties everything together. It made me think of a steaming-hot pan of juicy foraged mushrooms, deglazed with a splash of this sake to make the flavors burst even more. While I often serve lighter, more delicate styles chilled, this is one I’d gently warm so it can open up and show its depth.

Sake brewer, Kuramoto Touda-san is a self proclaimed fungi investigator, hence the name Kinoko which translates to "mushroom." His loves for mushrooms highly influences his sake and pairs well with them too. This sake is earthy and has more umani notes to it like fermented soybeans, kelp, and burnt caramel. It is more savory, so I suggest paring this with heavier dishes like gamy meats, stews, and of course mushrooms!

Mantensei creates elegant expressions of umami through sake that can be enjoyed at a wide variety of temperatures. • Mantensei polishes its rice to 50% even though the sake is not a Daiginjo in order to create extreme drinkability alongside rich umami and savory notes—a rare balance. • They use a higher-than-usual ratio of koji rice to bring out distinctive notes of smoke, honey, and soy.
