The wines of Wiston are a prime example of how good British bubbles can be. The chalky soils of the south of England are a continuation of the same Kimmeridgian strip that runs underneath Champagne, which, with the warmer weather climate change provides, makes it a prime site for bubbly production. This is a decadent blanc de blancs with bright Meyer lemon citrus, wild honey and sourdough toast, flinty smoke and chalky minerals. It has a rich texture, ample fruit balanced by great acidity and an impressively long finish. Enjoy with crab cakes or a nice shrimp cocktail.

Like the NV Brut from Wiston, the Blanc de Blanc leans toward a clean style with green and golden apple flavors. It differs in that the B de B's style is a tad softer and creamier. Lemon cream, white peach, ample chalk and a nice bit of minerality followed by a whiff of creme caramel. Lovely.

We finally got our hands on some of Wiston’s remarkable Blanc de Blancs. This 100% Chardonnay bottling is pressed in their traditional wooden Coquard basket press, fermented and rested in neutral French oak for a year, before aging more than two years on the lees in bottle. Reserve wines range back to 2008, with the 2018 harvest making up most of this iteration. Look for aromas of white flowers, baked apple, crushed quince, pie crust, stony minerals, chalk, saline, and oyster shell notes complete this magical wine. More volume and golden ripe fruit here versus the racier other NV wines. Beautiful stuff! Limited quantity.
