Lush aromas of ume fill the glass almost immediately. The texture of the sake has some viscosity and weight to it. Ume, citrus, and dark cherry notes are what I get on the palette. This sake is best served well chilled, or even on the rocks as an after dinner aperitif.

This plum sake is great! Nice and sweet for a dessert style wine balanced by an incredible acidity. I go to sushi restaurants where plum wine is an option, and I've always been so curious to try it. I'm so happy I did! You definitely get a lot of plum character from this of course, but there are other factors such as a fine minerality and honeydew sweetness. I'd be curious to try this as a sweetener in a cocktail.

Notes

Wakayama prefecture is the plum heartland of Japan. This brew has used three times more plums than a typical Umeshu. The particular plum used here is called Nankobai. Its skin is soft and the fruit itself is thick and juicy; one of the best quality plums in Japan. The richness is balanced by an incredible acidity that keeps this from feeling overly sweet. Concentrated and delicious, it's one of the most overtly appealling products made anywhere in the world.
