The young Maestro Emmanuel Ramos is one of the rising stars of this still under appreciated regions. In the little village of Mengoli de Morelos, his mezcals have been featured in a number of top quality brands. The rolling hills of Mengoli are the perfect environment for cultivating agave and the Ramos family has gorgeous fields filled with Karwinskii and other varietals. Here they are able to even cultivate the difficult to handle Tobala (a. potatorum), which grows quite large in the fertile soils. Roasted underground over mezquite and guamuche wood and crushed on stone tahona. Fermented in pine tanks with wild yeast and distilled once to 47.3% abv in April 2021. Only 175 liters were produced. Classic tobala flavors of bright evergreen and soft fruit. An exceptional mezcal of the highest quality.
