This new school American bottler is already making some big waves. Founded by the always impressive Pablo Moix, noted purveyor of exceptionally rare and delicious whiskies. Pablo has a way of finding exceptional casks and has been selecting barrels for over two decades at his bars and restaurants. That experience has opened doors that few have had the ability to walk through. The result is access to stocks of unprecedented quality and unique character. His line of single barrels, each adorned with an original work of art, is poised to be the next great whisky brand - Rare Character. This wonderful barrel of bourbon whisky was distilled at MGP in November 2016, but aged almost entirely at Castle & Key's ancient Warehouse B, the world's longest rick house. This brick warehouse, which was constructed in the early 1900s, measures 534' from end to end and can hold up to 33000 barrels. Only four stories high with hundreds of windows along each side, it's one of the most iconic structures of ancient bourbon lore. After some patch work, Castle & Key has the thing filled to the brim and it's particularly good at aging bourbon. The long narrow structure pushes air through the building enhancing the wood influence and evaporation. This high rye bourbon (60% corn, 36% rye, 4% malted barley) was bottled at cask strength without chill-filtration. The first release in this soon to be legendary label and a unique addition to the already excellent Indiana distilled single barrels on offer.
