This exceptional distillery led by one of Oaxaca's most exciting and endearing young Maestro Mezcalero is more than just an alcohol production facility, it's a pursuit dedicated to the preservation of the cultural and agricultural heritage of Mezcal. Founded by Rosalino Martinez Ruiz and his son Rafael Martinez Hernandez after many years of renting and working on palenques owned by others, the distillery is run by four brothers. Gonzalo Martinez leads the distillation, but batches are often tended by various individuals. While the Maestro on each batch maybe different, the quality is always top tier. This rare treat is one of the most successful aromatized Mezcals we've ever come across. Using a base of high quality espadin, the distillers dissolves a large ball of freshly produced cacao in the pot before distillation. The interplay between the bright citrusy espadin and the rich savory cacao is undeniably delicious. An absolutely perfect marriage of these two magical products.
