The exceptional distillery led by one of Oaxaca's most exciting and endearing young Maestro Mezcalero is more than just an alcohol production facility. It is pursuit dedicated to the preservation of the cultural and agricultural heritage. Founded by Rosalino Martinez Ruiz and his son Rafael Martinez Hernandez after many years of renting and working on palenques owned by others, today the distillery is run by four brothers. Gonzalo Martinez leads the distillation, but batches are often tended by various individuals and the Maestro on each batch maybe different, but the quality is always top tier. This field blend of various Karwinskii varietals is about as good as it gets. The most traditional style of production was simply to take the ripest agave from the fields to make the current batch. The resulting blend is roasted, crushed and fermented together creating flavor combinations that could never exist in a single varietal expression. The result is a mezcal of exceptional richness and balance that builds on the powerful minerality that can accompany some Karwinskii distillates with an sumptuous floral and fruit bouquet. The work of a true master and one of the most exciting spirits of any kind available. Clocking in around 54% it is not to be consumed without some reverence.
