Alex White, the found of Rezpiral, gives 30% of the proceeds from the sale of the "Series 6" mezcals back to the communities where they're made. They've gifted and transplanted over 25000 agave raised from seed in their nursery to mezcaleros throughout Oaxaca. The brand is committed to fair trade and sustainable production like few others. This is the first time Rezpiral has worked with the exceptional husband and wife team of Nicolas & Alejandrina Hernandez. They live in the small community of Rio Seco near Zoquitlan. This small batch was distilled in January 2021 and is a blend of four agave types including Bilia, which is the local term for Tobala. Alex's notes the spirit ran off the still cold, a testament to the care the Hernandez family takes. They used agave between 7 and 20 years old roasted for 6 days underground in conical volcanic lined ovens over mixed wood. Shredded on a mechanical mill before 7 days of natural fermentation in Cypress Vats. Double distilled in copper pots over open flamed fueled with Cactus wood. Adjusted with heads and tails and bottled without the addition of water. This deeply complex mezcal exemplifies the benefits of the ensamble. While no single agave takes over each plays an integral part in the ultimate flavor. The tepextate adds a subtle vegetal character, the bilia a pungent fruitiness, the cuishe a distinct minerality and the espadin an vibrant zestiness. One of the most complete and satisfying mezcals on the shelf at any price point.
