Alex White, the found of Rezpiral, gives 30% of the proceeds from the sale of the "Series 6" mezcals back to the communities where they're made. They've donated and transplanted more than 25,000 agave raised from seed in their nursery to mezcaleros throughout Oaxaca. The brand is committed to fair trade and sustainable production like few others. The wonderful father and son team in San Agustin Amatengo to the southeast of Ejulta have produced some of the best Rezpiral's to date. They're particularly adept at distilling Karwinskii. These special plants, matured for 13 years, were offered to Simeon and harvested soon after to produce this exceptional 100-liter batch. It's unclear if this plant is the long tall varietal using this name near Ejutla or the larger thicker varietal used to describe the barril agave near Santa Catarina Minas. Smoked for 3 days over oak and crushed with machete and mechanical mill, the agave is then fermented for at least 8 days in cypress vats. Single distilled with a refrescadera (small rectifying column on top of a typical alembic copper pot), it was bottled to taste and adjusted with spring water at a flamboyant 110 proof. Vibrant and elegant, the classic Karwinskii minerality is coupled with a simmering tropical fruit character and highly perfumed exotic spice.
