Pedro basically pays double market rates to help uplift these communities and in addition, each batch he purchases is split into two and half is given back to the people who produce it. He's also funding local community projects as well as helping improve working conditions via grants and no interested loans. Anciano harvests the wild agave Cenizo and roasts them in an underground earthen oven. The agave is crushed by hand using wooden mallets and distilled on wooden pots built by the distiller. Easily one of the most exciting and rare agave spirits on the market today.
