Produced from grain to glass by Redwood Empire in Sonoma County, this release is a major milestone in Redwood Empire's rising stardom. The mashbill is particularly unique; it's listed as 69% corn, 22% rye, 5% malted barley, and 4% wheat but in reality it's a blend of different mashbills, most with a high corn content around 70% but also including high rye and wheat mashbills where the corn content dipped down towards 51%. Long 7 day ferments add to the complexity of the spirit. It was distilled in Spring 2016 and bottled in the summer of 2021. The final blend comes from a meticulous tasting of over 100 barrels and careful blending of the top 26 barrels into this release.
