A much spicier nose is cooler and more elegant with its beautifully pure and layered mix of both red and blue pinot fruit compote along with perfumed floral nuances. The vibrant and delineated medium-bodied flavors possess a sophisticated mouthfeel while displaying abundant mineral influence on the rich, sappy and focused finale that just goes on and on. This is a knockout and should age and improve effortlessly for the better part of two decades. *Burghound Don't Miss Outstanding!!*

The 2019 Nuits-Saint-Georges 1er Cru Les Cailles was one of the more reserved wines in the range when I visited, unwinding in the glass with notes of plums, rose petals, sweet berries, orange rind and dark chocolate. Medium to full-bodied, layered and velvety, with terrific depth and concentration, beautifully refined tannins and lively acids, it's very promising. Bertrand Chevillon reported yields some 50% below average in 2019 but was justly delighted with the quality of the wines. This is another powerful, structured vintage at this address, but the wines are more vibrant than the fine 2018s and more structurally refined, too. As I've written before, this is one of my favorite addresses in all of Burgundy. Old vines, cultivated soils, moderate yields and long fermentations with entirely destemmed grapes are the order of the day at this address, with the Nuits-Saint-Georges Vieilles Vignes seeing some 20% new oak and the premiers crus 30%. Nuits' Tonnellerie Sirugue is the dominant supplier of barrels. (WK)

The 2019 Nuits Saint-Georges Les Cailles 1er Cru has a beautifully defined bouquet of dark cherries, violet petals and crushed stone; the oak is seamlessly integrated in this cuvée. The palate is medium-bodied with supple tannins, taut and fresh, leading to a slightly savory finish. Complex and energetic, this is one of the standouts from Chevillon this vintage. (NM)

Mid crimson purple. The bouquet suggests a warmer style of fruit, the palate brings us back to something more like where we want to be. The fruit is balanced and not too warm, though the alcohol is a mite too high, as shown by the ripe floral overtones. Drink from 2025-2030. Tasted Sep 2023.

Here the ripe fruit includes a strawberry note, but I am not finding quite the same class as in the Pruliers. Very dense dark almost sombre fruit to finish. A touch of sandalwood too. Very heady, so I am less of a fan of Les Cailles this year than I usually am. Tasted: November 2020."
