See Product DetailsAn unnamed pot distilled rum from a traditional distillery in Trelawny parish? What could it be? Well, you actually have two choices and either would be welcome, but we have a sneaking feeling that this fabulous single barrel is from the island's most sought-after estate. This, the most traditional producer of rum in Jamaica (and perhaps the world), continues to use centuries-old processes for rum production. The most unique being the use of "muck pits". Conducted in parallel to the standard production processes, this bacteriological fermentation uses the spent lees from distillation and organic refuse from the estate to create high concentrations of acids for use in fermentation. This is used in varying proportions to control ester levels during fermentation. The end result being a menu of rums with different levels of that characteristic Jamaican "funk". With age, the funk becomes complexity. Each distiller offers a menu of rums at various ester levels for blending purposes. This rum was traded under the JMC mark, which refers to the C <> H (C Diamond H). This implies ester levels between 1300-1400 gr/hL, which is VERY high. And while our supplier is not able to publicly confirm the exact source of this special spirit, all it takes is one whiff and you'll know exactly what you've got. So, we'll continue to beat around the bush, for their sake. You, however, should not because the only people this rum will disappoint are the unlucky ones who don't get a bottle.
