"Cosmic Dust is an interstellar adventure through the never-ending void that is space and time. Bright citrus and sweet fruit punch notes resonate harmoniously with the cosmic vibrations of the mixed fermentation expression. Our intention with this galactical beer was to really let the hibiscus shine. By doubling the amount of dried hibiscus flower that we have used in previous blends, we were able to not only showcase the vibrant magenta color but also extract the subtle floral aromas, and notes of cherry, strawberry, Meyer lemon, and pomelo. We didn't want the acidity to compete with the hibiscus character so we selected barrels that were tamer in acidity that also complemented the roundness and tannin expression of the flower."
