The powerfully flavored Mexicano Verde (A. Rhodacantha) is named because of the vibrant green coloring of its broad pencas. But the name also perfectly embodies the flavors we get when this rare varietal is distilled: earthy, mineral, vegetal, funky. This batch was roasted in the underground ovens at the Cortes distillery for 8-10 days over encino, yegareche, mesquite and palo de aguila wood. Rested for another 5-7 days after cooking before 8 days of natural fermentation in sabino wood. Distilled on two small pot stills withe the refrescadera and adjusted only with puntas and colas. 373 bottles produced for the US market.
