Locally made by founders Gerry and Linda Rowland of Napa Valley, Coit Spirits is producing the best gins to utilize tea leaves. The Rooibos bush (AKA Red Bush) was almost lost to the world before being rediscovered in its native Cedarburg Wilderness in 1772. The Western Cape of South Africa is the home of this wonderfully complex tea. The leaves are bruised and fermented before being air dried which releases the inherent fruit notes of the plant. The true artistry here comes in the formulation of a balanced recipe that is also stable. Tea distillates are inherently unstable and require additional botanicals to stabilize their flavor - Gerry and Linda have nailed it with a beautiful recipe that captures the pure essence of the Rooibos.
