Red licorice is a heavily present on both the nose and pallet. The Junmai is clean, vibrant with vanilla, almonds, and honey. It is a bit higher at 16-17% giving this sake a richer mouthfeel as well. It is produced in Kyushu, Japan and uses Itoshima Yamada Nishiki rice, a delicate long grain, that can be a tad tricky when it come to growing in the Fukuoka prefecture. Mii No Kotobuki does an excellent job producing this small batch sake.

The boquet on this sake is insane! Red licorce, crushed almonds, and goat cheese layered atop soft notes of berries and melon. Flavor/texture profile is rich and creamy. An insane value considering how high quality this offering is!

Super fragrant nose of goat cheese, almonds and red licorice. On the palate, dry and sweet at the same time. Vanilla and savory roasted nuts on the palate with raspberry and a light touch of spice. It lives up to its name...it's really lovely.

Established in 1922, Mii no Kotobuki are slow-pace brewers, with a high attention to detail, producing tiny amounts of sensational sake. The Toji [Master Brewer] at Mii no Kotobuki is Tadatsugu Inoue who has been making the Sake here since 1996. For the ‘Biden Hojo’ Inoue-san utilises local ‘Itoshima’ Yamada-Nishiki rice. The ‘Biden Hojo’ shows a vibrant nose of fragrant melon with hints of aniseed. The palate is layered showing melon, fennel with a touch of savoury spice.
