The Champagnes of Maison Billecart-Salmon are made from grapes grown in a radius of 20km around Epernay, in the vineyards of the Montagne de Reims, Vallée de la Marne and the Côte des Blancs. This cuvée is made from the best parcels of the Côte des Blancs. Simon Field MW: A serious oak-aged blanc de blancs, plenty of pineapple and quince, nutmeg and spice; it’s a very impressive and alluringly seductive wine, young beyond its years! Alan Bednarski: Classic, typical oven-baked stone fruits seasoned with fresh black pepper and cinnamon, a hint of salinity on the finish. Tim Hall: A wide-awake nose: butter, lemon and greengage. A tight middle but so refreshing. (Panel tasting)

Disgorged in October 2018 with seven grams per liter dosage, the 2007 Brut Blanc de Blancs Cuvée Louis Salmon derives from the villages of Cramant, Chouilly and Mesnil-sur-Oger, and half of the vins clairs that went into the blend were vinified in older barrels. It's still tightly wound, even after over a year on cork, unfurling in the glass with a delicate bouquet of crisp yellow apple, Meyer lemon, blanched almonds, elderflower and crushed chalk. Medium to full-bodied, deep and searingly intense, it's seamless and complete, with a bracing spine of acidity, a delicate pinpoint mousse, and a long, mouthwateringly mineral finish. This is a serious, built-to-age wine that will really reward patience. (WK) 95+

The 2007 Brut Cuvée Louis Salmon is another stellar wine from Billecart-Salmon. In many ways, it is the polar opposite of 2006. Here the team felt the wine needed body to balance the tension of the year. About half of the lots were done in barrel, while most of the wine underwent malolactic fermentation. Pretty citrus and floral notes abound. Stylistically, the 2007 is a bit more open than the 2006, even though the personalities of the two years would have suggested the exact opposite. (AG)

With 50% vinification in oak, this Champagne has a deliciously smooth character while keeping the steely edge of Chardonnay from the Côte des Blancs. Its texture is such that, while ready to drink, it could age much further, giving the possibility of a fine maturity. (RV)

The 2007 "Cuvée Louis" is our best value in true tête de cuvée Champagne, and one of the best that we have at any price. It is made exclusively from Grand Cru Chardonnay from the hallowed ground of Mesnil, Cramant and Chouilly and 50% barrel fermented. This ultimately elegant wine has the creamy texture and tight miniscule bead that you would expect from a top of the line offering from a great house like Billecart, but has even more to offer than that. For me, it is not the subtle brioche on the nose or even the precise Meyer lemon fruit on the mid palate, but the ultra-long swelling finish that really floors me with this wine. The chalky, concentrated length of this bottling is astounding. I loved to recommend this Champagne at $170, at the current price it is just too good.

Wow, this is a very delicious Champagne! On the nose from the forefront, Seville orange, praline, honeycomb, vanilla wafers, and citron marmalade. Apple and Asian pear follow, but there is an overwhelming yet lovely white floral, Seville orange and slightly oxidative aroma that really separates this Champagne from the others. Medium acidity and an exceptionally nice finish. This one is a keeper for a couple years if one chooses but when enjoyed decant and savor with someone really special or as a treat for oneself.

This immediately explodes aromatically out of the glass and you know its going to be classy stuff, as one expects from Billecart-Salmon. Gary was able to get a great price on this Cuvee Louis and as a result we can all benefit and enjoy this fabulous Champagne. 100% Grand Cru fruit from the excellent 2007 vintage, and with 10 years on the lees there is a lot of complexity and weight to the creamy palate. I think this would be a great choice to lay down and drink with more bottle age and even more complexity. This shows the power and intensity of fruit from the Cotes des Blancs with a fantastic chalk filled palate that is sure to be lip-smackingly delicious.

This great Blanc de Blancs is made exclusively from Grand Cru Chardonnay from Chouilly, Cramant and Mesnil. It is 25% barrel fermented, and done in a wonderfully creamy, yet still long and chalky style. A real luxury! (Gary Westby, K&L Champagne buyer)
