This "over-ripe" espadin spirit is extremely full and viscous in texture and loaded with ripe tropical fruits on the palate. It's soft, long, mellow, and ripe. It feels like drinking a wonderful fruit smoothie. The agaves are given an extra year to rest after their stalks are cut so that the sugars can be further concentrated into the pina before harvest. Like everything from Rezpiral, the batches are itsy bitsy. Just 135 liters of this incredible juice were produced.

Rezpiral Spirits distilled from agave (uncertified mezcal) is one of the most ambitious agave spirits projects available in the United States. Miniscule batches from all over Mexico that are treated with the utmost respect are imported into select markets. The at the heart of the endeavor is an ethos that respects and supports the mutligenerational knowledge, independence, flavors, lands, and traditions of each mezcalero family. The Espadin-Capon bottling was made by Aureliano Hernandez in the town of San Baltazar Guelavila. It is made from agave ranging from 10-12 years of age and double distilled on copper alembique stills. The batch is just 135 liters. The capon designation for this Espadin mezcal indicates that the plants were intentionally left in the ground for longer maturation, often with the flowering stock cut to concentrate the sugars into the pina.
