Vintner Austin Hope, whose family is intertwined in the rise of Paso Robles, spent years working to release a wine of this caliber. Dark and thick in the glass, aromas of black currant and blueberry meet with roasted coffee, chocolate syrup and baked plum on the wondrous nose. The palate is soft and extremely expressive, with blueberry, black pepper, firm midpalate tannins and a finish that’s redolent of cappuccino candies. (MK)

This is a decadent wine, effusive in its cassis, black plum, black olive and forest floor aromas and flavours, plus a hint of mint and pomegranate. It's powerful and ripe, yet wears it well, without any discernible heat. (LM)

The 2015 Cabernet Sauvignon Paso Robles features a deep garnet-purple color and nose of baked black currants, black cherries and dried herbs with touches of menthol, baker’s chocolate, licorice and black soil. The full-bodied palate has a solid structure of chewy tannins and lively acid framing the muscular black fruit preserves, finishing on an earthy/dried herbs note. (LPB)

Big, robust, jammy and fruit forward. If you love Cab that matches Robert Parker's palate, this may be the wine for you. From the makers of Troublemaker, here's another wine you can definitely get into trouble with, as it is very easy drinking and approachable. Paso Robles is proving once again that it's an American Viticulture Area that stands on it own.

I preach a lot about bringing the Old World style to the New World in the form of acid and balance, but sometimes I just want some fruit! Whether I'm cooking a giant rib roast or it's 20 degrees outside, sometimes the occasion calls for something more robust and fruit-driven then the high-acid, spicy reds that typically grace my wine fridge, and that is where the Austin Hope Cab Sauv steps in! Paso Robles never disappoints when it comes to bringing the fruit, and the Austin Hope is full of copious amounts of blackberry, blueberry, plum and cocoa. Top this off with a palate that is a touch brighter than its obvious competitor and close comparison, all the while still delivering the intense, rich black fruit and mocha that big Cali Cab drinkers want and drink.

Notes

Austin Hope Cabernet Sauvignon stems from a driving fascination with the various terroirs of Paso Robles. It also tells the story of the Hope family’s long history in the region and how their pride and knowledge can be brought to life in a bottle of wine. Winery note: "Deep ruby in color, the 2015 Austin Hope Cabernet Sauvignon expresses intense fragrances of black currants, ripe black cherries and blackberries with subtle notes of violets, mocha and dried spices. It’s a big, powerful, modern-styled wine with velvety tannins and heaps of juicy blackberry and cherry fruit, while nuances of cedar, clove and vanilla bean round out the long, smooth finish. It’s full bodied, rich and balanced by fresh acidity with a firm, polished tannin structure."
