Heidrun "Oregon Chicory Blossom" Sparkling Mead, California (750ml)

From the meadery: "This is a light and crisp varietal mead with botanical notes of pine and juniper in the aroma, similar but more subtle than the Oregon Radish Blossom if you're familiar with that varietal. There is a bite on the palate coming from the effervescence but also a butteriness -- perhaps beeswax -- in the flavor that is comforting. Some would say it is gin-like in the finish. Pair this with savory curried dishes. Heidrun is a meadery in Point Reyes Station who specializes in dry and crisp sparkling meads produced from single-varietal flower honeys. All of their meads are produced in a Champagne method--complete with riddling, disgorgement, and secondary fermentation--and are serious, Champagne-inspired sparklers with delicious honey flavors.
