From the misty Mazateca mountains of Oaxaca comes a rum so beautifully expressive of sugar cane that it might just make people forget about agave. Paranubes is made in a high-altitude 'cloud forest' about six hours by car from Oaxaca City. Four varieties of cane are harvested in the forested hills, transported out by burro, then driven to the distillery. The fresh-pressed cane juice is fermented naturally in pine vats, then moved to a copper column-still fired by spent cane fiber. The rum is distilled to proof: nothing added or removed. The result is smooth, round and sweet--not as funky as rhum agricole and more elegant than cachaça. It’s complex and smooth enough to sip neat, but the silky texture makes for an irresistibly sleek daiquiri. *Year's Best Spirits 2017* (JM)

An agricole rhum from Oaxaca, the region better known for mezcal, this is an exciting proposition. The liquid is clear in the glass, with a pungent, funky scent and bold notes of banana and cinnamon on the palate, finishing fiery, though with a pleasing, fleeting grassy exhale. (KN)

Wow, I mean seriously wow. This is one of those spirits that just makes me sit up and take notice. The nose immediately hits you with a fairly big grassy and slightly woody note. However, as powerful as the aromatics here are the body is light and balanced. Beautiful oxidized fruit, a touch of earthiness, much less aggressive than many agricole. Although David has just been sipping it this is the kind of spirit I cannot wait to start making cocktails with. I love when I get to play with something new and this is going to be a very good summer with this spirit I feel.

Interesting and delicious, this rum is a real surprise for me because I never thought that I would be tasting a rum agricole from Oaxaca. The nose is intense and expressive with grass and herb smells. This leads to soft fruity flavors with a hint of sweetness but over all this rum is on the dry side. Tasty alone ( if you like the agricole flavor profile) it should make great cocktails.

The Paranubes Oaxacan aguardiente de caña is one of, if not the, best agricole rhums I've ever tasted and it beautifully balances a smooth and fruity character with the grassiness and the intense cane flavor of something like Neisson. What it removes is the funk, the earth, and the sometimes bitter notes that send some people running for the hills. The aromatics are absolutely stunning—there is a pure and unflinching note of raw cane that absolutely explodes from the bottle. At 54%, the rum is no slouch. But it's clearly distilled with a master hand because it's incredibly polished despite all that intensity. I could drink this straight out of the bottle, neat in a glass, on the rocks, in a cocktail, or simply with soda. I can't get enough of it—it's that good.

Distilled to proof with no additives, this rum - or aguardiente de caña as it's known regionally, is exactly what you would find lost in the cloud forest of the Sierra Mazateca mountains of Oaxaca, Mexico.
