When I tried this the other night, my company and I were genuinely stunned by how good it was. This Premier Cru blanc de blanc pours a deep golden color, has rich fruit with honey, acacia blossom, lemon meringue, and a beautiful leesy toastiness. The texture is velvety and creamy, with fine bubbles and a nearly eternal finish.

This beautiful wine, in the best way, does not require food accompaniment or much thought at all, just a day that ends in 'Y'. It is a balanced and lively Champagne, perfect for Chablis lovers, or any and all sparkling wine folks. It will stand up to food if needed, but is enjoyable solo as well. Somehow, classic and modern all at once. I see no reason or time that would not be appropriate to open this gorgeous wine!

Angelique and Damien (The "A" and "D" of A.D. Coutelas) have 17 and 1/2 acres, mostly in Villers sous Chatillon, but also in Ambonny, Bouzy, Vitry la Francois, and Troissy. Their family has been growing since 1809 and started making their own Champagnes in the '20s. The majority of their vines are over 60 years in age, and all the work in the vineyards and cellar is done by hand. This great blanc de blanc comes from one old (over 40 year) vineyard in the Premier Cru of Vertus just south of Mesnil. This has great creaminess and clean earthy flavors as well as some nice sourdough bread aromas. It offers great white fruit expression as well as chalky minerality. Perfect for an aperitif!
