This fabulous collaboration between Antica Distilleria Quaglia, Chef Frederico Ricatto, and the Jerry Thomas Project in Rome is looking to reinvent the omnipresent vermouth. Not the traditional sweet vermouth, it offers unprecendented complexity and depth not found in other red vermouths. With a base of high-quality nebbiolo from the Langhe and inspired by historical celebrity bartender Jerry Thomas' own recipe, the infused wine is left to age in barrel for many month. Most red vermouth is actually made from white grapes and colored, this starts with high quality wine and feels mature in a way that no other red vermouth does on the market. The ingredients, some perpared by the distillery itself from local sources and others sourced from high-quality artisan purveyors throughout the world, distinguish the Del Professore from all other Vermouths. The main ingredients here are wormwood, Alpine mint, cloves, mace and gentian. Designed as a digiestif, it performs well in many traditional cocktails calling for sweet vermouth, although with less sweetness.
