Like all new distilleries, it takes time for them to truly find their footing. Wolfburn, though impressively crafted from the outset, initially lacked the maturity needed to be genuinely compelling. That has now changed. As they approach the ten-year milestone since their first distillation, their whisky is coming into its own and shining brightly. Situated in the town of Thurso, along Scotland’s northern coast and just across from Orkney, Wolfburn holds the distinction of being Scotland’s most-northerly Highland distillery. The story began in 2011, during the height of the Scotch renaissance, when the team behind Wolfburn visited the site of the original distillery—built in 1821—only to find it reduced to little more than a pile of stones after nearly 150 years of abandonment. Though the building had vanished, its namesake water source, a cold, clear stream, remained untouched. The land was acquired in 2012, and by early 2013, the distillery was up and running. For those seeking a whisky that strikes a balance between Highland Park and Glenmorangie—both in geography and character—Wolfburn is a welcome addition to the Scotch distillery canon, offering whisky that delights in the present while promising great things for the future.
