The 500 Mangoku varietal of rice is difficult to use but when handled properly can be devastatingly intriguing. Light bodied but full flavored, this Junmai sake is fresh, but has the power and complexity to pair with complex foods. It does especially well warm (not hot, but warm) with rich shellfish like lobster, but can go with grilled proteins if served chilled.
