Heidrun is a meadery in Point Reyes Station that specializes in dry and crisp sparkling meads produced from single-varietal flower honeys. All of their meads are produced in a Champagne method--complete with riddling, disgorgement, and secondary fermentation--and are serious, Champagne-inspired sparklers with delicious honey flavors. Like fine wine, mead from micro regions like this Point Reyes estate release reflect terroir: the bees collect pollen from a unique mix of flowers within their home range. From the meadery: "Our estate varietal, The Point Reyes Wildflower, is released just once a year. This year, we produced 600 bottles from our 2015 honey harvest from the hives kept on the meadery property. This varietal is our most elegant to date and is delicate and brut dry with lovely floral notes and a slightly herbal finish. Popping open a bottle of this is a great way to celebrate the holiday season!"
