This new La Gitana has spent eight years of biological aging under the veil of flor and has been bottled with minimal filtration, so that what is in the bottle is close to what was in the cask. And everything seems to be in place in this Manzanilla: mineral acidity, iodine and saline scents, notes of almonds and apricot, the stinging texture, the lasting impression of sea breezes. This is a Manzanilla in a Zen balance.

Very energetic, with a crunchy feel to the mix of dried chamomile and honeysuckle notes, accented by hints of lemon peel, white peach and quinine. The long finish is tightly zipped up. (JM)

This is a new bottling of their NV La Gitana Manzanilla en Rama marked as Saca de Primavera 2017 on its back label (the spring 2017 bottling). With an average of six years under flor, it has a deep golden color and an intense nose followed by a sharp palate, chiseled by the effect of the yeasts. It's a selection of the 35 800-liter oak barrels that compose the La Guita solera. They do two bottlings per year, one in spring and another one in autumn. In spring the wines tend to be more aromatic, open and showy. It has the chalky minerality from the albariza soils. (LG)

Notably bready nose and really fresh. Tangier with more obvious acidity than many Manzanillas. Super-clean, racy and sleek. Definitely superior.

En rama bottlings highlight the incredibly fresh, salty, and umami rich complexity of Manzanilla and Fino sherries; these are the next best thing to enjoying wine freshly drawn from a barrel in Sherry country. Bright, invigorating, very mineral driven stuff that you owe it to yourself to try, particularly with snacks such as fried seafood, sliced salt cured ham and olives.
