Noted winemaker Pax Mahle has returned to traditional methods and grapes for his Pax label (while his Wind Gap label is geared toward more esoteric varietals.) Working with distinctive organically farmed cool-climate sites, Mahle's focus is on small-production, minimal-intervention winemaking, with native-yeast fermentations, and no fining or filtering. He seeks to let the terroir and the vintage speak through the wine. This 2006 single-vineyard Syrah is dark and brambly, with floral highlights. This vineyard yields Syrah with classic Northern Rhône characteristics, and the cool climate keeps acidity fresh and alcohols naturally low.
